It’s the kind of experience I came to expect at Katana Kitten. It’s a beautifully composed drink in a friendly lively atmosphere. A new generation of Japanese-inspired New York bars has arrived, including Katana Kitten, Tokyo Record Bar, Straylight, Bar Goto, Bar Moga, Alley Cat Amateur Theatre, and The Hidden Pearl. His Highball program has perfected the art of making the classic cocktail constantly and as it should be, extremely cold and exceedingly bubbly. And finally they swap out sweet vermouth for Japanese aged umeshu (plum brandy) which rounds it all out with a wonderful sour fruitiness and herbal quality. The first cocktail book from the award-winning mixologist Masahiro Urushido of Katana Kitten in New York City, on the craft of Japanese cocktail making Katana Kitten, one of the worlds most prominent and acclaimed Japanese cocktail bars, was opened in 2018 by highly-respected and award-winning mixologist Masahiro Urushido. In 2018, well-known bartender Masahiro Urushido opened craft cocktail bar Katana Kitten on Hudson Street in NYC’s West Village. Instead of Campari, they use Italian Caffo Red Bitter which brings a more mellow orange bitter and baking spice quality. The Dutch spirit is maltier and a bit sweeter than your typical dry gin. Katana Kitten swaps out the usual gin for its older cousin genever. The classic Negroni cocktail has become beloved by modern mixologists everywhere and there are endless interpretations. But I have not written about one… until now. And I really enjoyed all the complex but approachable cocktails I tried. Last year, I wrote about the grown up bologna sandwiches that are a must. I truly enjoyed everything I’ve tried at Katana Kitten. And I brought a group there who put me in charge of picking the meeting spot (that happens a lot). This three-year-old bar in Greenwich Village was recently named the tenth best in the world, making it NYC’s highest-ranking contender. But it was the last cocktail bar I visited (at least in New York) before we had to settle to take-out cups or mixing our own Manhattans. Of course, they are currently closed due to the pandemic. And it was a comfortable hang-out that was intimate but not too crowded. ![]() The Japanese-inspired drinks and food were very impressive. Katana Kitten was shaping up to be one of my favorite cocktail bars. It was somewhat under-the-radar despite winning the award for Best New American Bar at Tales of the Cocktail.
